Citrus Salad
I could spend hours talking about my love for Cara Cara Oranges. They're sweet, seedless, and the perfect shade of orangey-pink. You can, of course, just enjoy them plain, but it's so easy to turn them into something special. I like to peel the rind, cut them into circles, and serve them sprinkled with tajin or make a quick & simple salad like this one.
INGREDIENTS
1 cara cara orange, peeled and cut into 1/2 thick slices
1 blood orange, peeled and cut into 1/2 thick slices
1 small shallot, sliced
2 cups argula
1-2 tbs crumbled feta
1 tbs olive oil
Black pepper, to taste
Sea salt, to taste
METHOD
Assemble the salad starting with the arugula, followed by the sliced oranges, shallots, and feta cheese
Drizzle over the olive oil and sprinkle over the sea salt and black pepper.
