Watermelon Rose Granita

Serves 4

INGREDIENTS

1 1/2 lbs. cubed watermelon (I used half of a 5lb mini seedless watermelon)

2 tablespoons rose water

1 lime, juiced, about 2 tablespoons

1/4 teaspoon kosher salt

Lime wedges, for serving

METHOD

  1. Add watermelon, lime juice, rose water, and salt to a blender and blend to liquify.

  2. Pour the mixture into a shallow glass or metal dish, and place in the freezer uncovered. Every 30-45 minutes, scrape the surface with a fork to break up the ice crystals. After a few hours, it will be completely frozen, paler in color, and very flaky.

  3. Divide between four bowls, and serve with lime wedges.
