Chocolate Baked Oats

"I'm having baked oats for breakfast," is just a fancy way of saying, "I'm eating cake for breakfast."

INGREDIENTS

1/4 cup milk, I used almond milk

2-3 tablespoons maple syrup, to taste

1/4 teaspoon vanilla extract

1 egg

1 tablespoon unsweetened cocoa powder

1/2 teaspoon blk. drops, optional

1/2 cup rolled oats

1/4 teaspoon kosher salt

1/2 teaspoon baking powder

Semisweet chocolate, optional

METHOD

  1. Preheat the oven to 350°F.

  2. Add the milk, maple syrup, vanilla extract, egg, cocoa powder, blk  drops, rolled oats, kosher salt, and baking powder to a blender and blend until smooth.

  3. Pour the batter into a 6-10 oz ramekin and bake for about 20 minutes. A few minutes before removing it from the oven, place a semisweet chocolate square over the top and bake to melt.

  4. Remove from the oven, spread the chocolate in an even layer, and serve.
