Chocolate Chip Cookie Bars
If brownies, chocolate chip cookies, and magic bars had a love child, it would be these chocolate chip cookie bars. They’ve got the texture of a brownie, the chocolatey goodness of a classic cookie, and all the fun of a magic bar. The coconut in this recipe makes things extra special, but if coconut isn’t your thing, feel free to skip it. The best part?! Everything happens in one bowl.
INGREDIENTS
1/2 cup butter, melted
1/4 cup, sugar
1/2 cup, packed brown sugar
1/4 tsp kosher salt
Splash of vanilla
1 egg
1 cup flour
1/4 teaspoon baking soda
1 cup chocolate chips
¼ cup sweetened shredded coconut
Assorted toppings (chocolate, flaky salt, pecans...)
METHOD
Preheat the oven to 350F
To a large bowl, add the melted butter, the sugars, the kosher salt, and the vanilla. Mix until well combined.
Add one egg and whisk for about one minute or until very well combined and slightly paler in color.
Add the flour and baking soda and gently fold until just combined.
Add the chocolate chips and fold.
Spread the batter/dough into a greased 9x9 baking dish and sprinkle with the shredded coconut and any additional toppings as desired.
Bake for 20 minutes or until nice and golden brown. Let them cool for 20 minutes before cutting them into 16 equal pieces.
