I could spend hours talking about my love for Cara Cara Oranges. They’re sweet, seedless, and the perfect shade of orangey-pink. You can, of course, just enjoy them plain, but it’s so easy to turn them into something special. I like to peel the rind, cut them into circles, and serve them sprinkled with tajin or make a quick & simple salad like this one.
Ingredients:
1 cara cara orange, peeled and cut into 1/2 thick slices
1 blood orange, peeled and cut into 1/2 thick slices
1 small shallot, sliced
2 cups argula
1-2 tbs crumbled feta
1 tbs olive oil
Black pepper, to taste
Sea salt, to taste
Method:
- Assemble the salad starting with the arugula, followed by the sliced oranges, shallots, and feta cheese
- Drizzle over the olive oil and sprinkle over the sea salt and black pepper.
